pigThe Canadian pork industry is made up of 7,020 hog farms with farm cash receipts of $5 billion. While production takes place in every province, 78% of hog farming is in Quebec (27% of hogs), Ontario (22%) and Manitoba (29%). Quebec is also the largest province for pork processing (34.1% of processing) followed by Ontario (21.5%) and Manitoba (20.2%).

Exports account for two-thirds of total pork production. In 2014 Canada exported 1.1 million tonnes of pork valued at $3.7 billion to almost 100 countries. Canada is currently the 3rd largest pork exporter in the world behind the EU and the United States.

By value, Canada’s largest export markets in 2014 were the U.S. (39% of exports), Japan (25%), Europe (10%), Russia (8%), and China (5%). Exports have been growing over the past decade, almost tripling from $1.1 billion in 1998 to $3.7 billion in 2012
